Artisanal cheese dairies offer quality and varied flavors in the countryside

Artisanal cheese dairies in rural Jundiaí, Brazil, are gaining national and international recognition for their unique cheeses.

In the countryside of São Paulo, the so-called Cheese Route is drawing more visitors to experience the rich flavors of artisanal cheeses. One notable cheese dairy in Jundiaí stands out, where producer Célia Storani Biscaro converted her nursing career to focus on creating goat milk products for supplementary income, eventually establishing a thriving cheese-making business.

This dairy currently produces 18 varieties of cheeses from cow's milk and 13 types from goat's milk, including fresh cheese, semi-cured, mozzarella, and parmesan. Additionally, some of these cheeses feature unique recipes and have received international recognition and awards. The farm supports a significant scale of operations, housing nearly 100 cows and over 130 goats, with milk being collected twice daily.

The Cheese Route not only promotes local agriculture but also highlights the cultural significance of cheese production, illustrating the blend of rural charm with gastronomic excellence, which is becoming increasingly appealing to food enthusiasts both locally and abroad.
