Tunday Kabab is a renowned dish that originated in the historic city of Lucknow, known for its rich Mughlai culinary heritage. The dish gained fame primarily due to Nawab Asaf-ud-Daula, a prominent ruler of Lucknow, who was fond of non-vegetarian cuisine but faced difficulties savoring hard kababs due to his deteriorating dental health. In an effort to continue enjoying his favorite dish, he announced a reward for any chef who could create a kabab that would easily melt in the mouth without the need for chewing.

The challenge was taken up by Haji Murad Ali, a chef who was famously known as 'Tunda' because he had lost one arm in an accident. He ingeniously crafted a kabab using a complex blend of about 160 spices. His innovation resulted in a soft, tender kabab that met the Nawab's needs, allowing him to indulge in his beloved dish without any discomfort. This culinary masterpiece not only delighted the Nawab but also elevated the dish to a royal status in Lucknow.
