Pöppönen emphasizes that the trend toward wanting quality, artisan-style local food has grown in nearly all public events, as he observes while working across various festivals throughout the summer. Attendees are not only looking for quick bites but are increasingly requesting well-crafted, tasty meals at restaurant level. Salppuri Oy, responsible for organizing the Salpaus Games, also actively collects visitor feedback annually, including inquiries about their food preferences, which the organizers aim to fulfill.
Despite the increase in demand for higher-quality options, Pöppönen assures that traditional competition sausage will not disappear. The balance between maintaining traditional offerings and incorporating newer, gourmet choices appears to be a successful strategy to cater to diverse visitor tastes at this popular Finnish sporting event.
