The price of spring cabbage, known for its delicate flavor and prime seasonal status in early spring, has seen a dramatic increase of nearly 30% in just one month. This surge can be attributed to a spike in demand fueled by social media trends, particularly the rising popularity of 'spring vegetable bibimbap', which has led to consumers increasing their purchases. According to the Agricultural Products Information Center (KAMIS), the average wholesale price of top-grade spring cabbage reached 48,841 Korean won for 15 kilograms in Seoul's Garak Market, reflecting a notable increase from just a month prior.

The fluctuations in prices are linked to supply issues resulting from cold weather impacting the main production areas in the Jeonnam region just before the Lunar New Year. Additionally, the demand surge coincided with a decline in the trend of 'Dubai Chewy Cookies', leading consumers to seek out the fresh, seasonal flavors of spring cabbage. Retailers have reported significant increases, with sales at Emart, for example, rising over 40% compared to the previous year. This spike is evident as the price of spring cabbage at retail locations has now exceeded 5,000 won per head, compared to around 2,000 won last year.

Spring cabbage, primarily cultivated in the warmer regions of Wando and Jindo in Jeonnam, dominates the market, accounting for over 90% of national production. Typically sown in September and harvested from November, the spring cabbage crop is harvested primarily in the early months of the year, from January to March, where it develops a stronger sweetness and crunch, making it a limited-time offering in spring. When choosing spring cabbage, consumers are advised to select heads with a soft green color and minimal blemishes, as these qualities indicate freshness and better taste, particularly as this season's produce boasts notable sweetness and flavor.
