Toxin found in infant formulas comes from common bacteria and poses risks to children

A heat-resistant toxin called cereulide, produced by the Bacillus cereus bacterium, has led to recalls of powdered infant formulas by Nestlé and Danone due to health concerns for children.

A recent investigation has revealed the presence of a toxin known as cereulide in powdered infant formulas, prompting recalls by major companies like Nestlé and Danone. This toxin is odorless and tasteless, and it comes from Bacillus cereus, a bacterium commonly found in the environment. The primary concern is that this toxin can cause severe vomiting, nausea, and dehydration, especially among infants and young children, who are more vulnerable to foodborne illnesses. Experts point out that the recalls are preventative measures, emphasizing that unmentioned products remain safe for consumption.

Diogo Thimoteo da Cunha, a director at the Brazilian Nutrition Association (Asbran) and a professor at the State University of Campinas (Unicamp), explained that the spores of Bacillus cereus are prevalent in ingredients used in powdered infant formula, particularly in dry raw materials such as powdered dairy and carbohydrate sources. These spores can survive drying and storage processes that usually eliminate other bacteria, posing a unique challenge for food safety in infant nutrition. The presence of higher-risk ingredients increases the likelihood of contamination, which is why the industry is taking superfluous precautions.

The ongoing recalls and the heightened attention to food safety protocols also resonate with a broader public health narrative, especially in light of previous incidents of contamination in food products.
